The European Commission announced on Tuesday that it had registered a geographical indication for the Madarasi birspálinka spirit, making it the 12th Hungarian pálinka to get EU protection, the ministry of agriculture said.
Madarasi birspálinka may be produced in commercial pálinka distilleries located in Bács-Kiskun County, the EC said. The quince used as the basic ingredient may originate from this area only, it added.
The high average temperature and plentiful sunshine of Bács-Kiskun County and the loose sandy soil which heats up quickly give the quince an excellent environment.
The expertise used in processing the quince involves post-ripening, so that the aroma materials in the fruit concentrate further, giving the pálinka its unique flavour.
